Trawling for recipes

Yes it is that time.  Although, since I last wrote, I have heard the ACTUAL words spouting fourth from the Small Human's lips....

" Muma, I need crackers and VEGAN cheese for lunch please"!!!!!!!!


  So small amounts of progress are being made!!

In other news this week, we have been out on group day trips and my kids have been eating pure junk.  So while it is nice not to have been shot this week, it makes the Veganization harder and me seem more evil when I place healthy foods in front of them.  If looks alone could kill I would be posting from the great beyond because at the day camp type thing we did on Monday and Tuesday, the morning started with make your lunch.....Medium Human was about to make a sandwich with lunch meat laden with enough chemicals, nitrates and other goops to embalm a small cat.  So I told her that while I would gladly let her have something at restaurants from time to time, the consumption of lunch meat was not even an option; I had made her a PBJ anticipating this (she loves a PBJ) and, uuuuugh, the look I got was a mix of a of

"a pox on you woman" and "may your death be slow and painful".

Anyway, I have yet to decide on a dinner, I am about to hit The Happy Herbivore books www.thehappyherbivore.com and I will come back with a delightful recipe that I hope will be met with moderate optimism - heck I would settle for "it wont make me vomit"!

To the BOOK CAVE Batman!


So I decided on Chicken (ISH) Nuggets!

1 can chick peas
1tsp Poultry Seasoning Mix

1tsp Dijon Mustard
1tbsp Vegan Mayo
1tsp Braggs Liquid Aminos
1/3 cup Vital Wheat Gluten
3tbsp water

Mash up the chick peas.  Add everything EXCEPT the gluten and water.  Then add the last 2 things.  Stir, mix divide into "nuggets".  Bake at 350 until they are nice and brown.  Flipping every 10 mins is a good idea!

I am going to serve with home made honey dijon mustard ( 50/50 mix of both)

UPDATE


The chef was NOT shot.  I got a thumbs in the middle and TOTAL consumption from Small Human, and a thumbs down after 2 bites from Medium Human.  My honey mustard sauce got TWO THUMBS UP from everyone!!!  If only it had protein in it!!!!  LOL
