I had made it before the "Mexican night" with vegan cheese in tortillas, BUT I hand made the tortillas and STILL success!!!!
And there was MUCH rejoicing!

Whole Wheat tortillas!
- 2 1/2 cups whole-wheat flour
- 1/2 cup oil ( I used coconut)
- 1 teaspoon salt
- 1 cup warm water
- Mix everything EXCEPT the water in a mixer.
- Add the water
- Make the dough into 8 chunks
- roll into flat circles
- cook in greased skillet for about a minute on each side.
Then we put in Daiya ( www.daiyafoods.com ) Mozzarella and Cheddar and served with vegan sour soy cream!
