Soup in June!

Apparently summer can be soup weather!  Small and Medium Humans both REALLY liked my knock off version of miso soup with rice noodles.  I got a thumbs up on this, but they will both eat their body weight in Chinese food!



Chinese Noodle Soup

  1. Your fave chopped veggies.  I used carrots, broccoli and snow peas
  2. 3tbsp soy sauce or Brags
  3. 2tbsp cooking sherry
  4. 2tbsp sesame oil
  5. 2 cloves minced garlic
  6. 3tbsp tahini 
  7. 1tbsp agave
  8. 1tbsp rice vinegar
  9. 6 green onions
  10. 8 cups low sodium veggie broth
  11. mei fun rice noodles ( the SUPER skinny ones)

Put the oil in the pan, add the carrots first, then broccoli, onions and snow peas, saute for a minute or 2, add in broth and everything else, boil, simmer for about 20 mins, then serve.
