The successes so far

Phew, I feel like I have verbal diarrhea!  Just trying to catch you all up to where I am today.  Not far to go once I post the accepted recipes, and get to what's on the menu tonight!  Sooo yes, the chef has been shot several times, BUT we have FIVE acceptable and repeatable recipes that received the big .................

Well actually, I think it was probably 2 thumbs up and 3 thumbs in the middle.  The two with the thumbs up are pancake and crepe recipes.  Medium and Small Humans are BIG breakfast fans, so this was a pretty easy sell.

In no particular order I will jump right in here.  This is what we had for breakfast this morning and it has a very happy thumbs up.    (Drum roll please for the first posted recipe on here)

Vegan Pancakes!
This recipe came from www.colourfulpalate.com  and I added to it.

Vegan Oatmeal Pancakes

  1. 1 ¼ cup old fashioned oats
  2. ½ cup organic whole wheat flour
  3. 2 tsp. baking powder
  4. ½ tsp. Himalayan salt
  5. 1 ½ cups vanilla soymilk*
  6. 1tsp vanilla flavoring
  7. a sprinkle of cinnamon
  8. optional things to make them SUPER FOOD a scoop of vegan vanilla protein ( I use Sun Warrior brand  http://www.sunwarrior.com/ )
  9. 2 bananas

I make and mix almost everything in my blender, so I put in the oats and set them "grinding" until they look like flour.  Then I add everything else and cook them in a little canola oil.  I top them with raw unheated agave - just a drizzle.  The kids put HFCS FREE syrup on theirs.

Ta daaaaa!  Try not to get over excited at my cheap blue plastic dish!!

I get my nutritional information on this page http://caloriecount.about.com/cc/recipe_analysis.php and it calculates that this recipe has the following if you make SIX pancakes......

Success #2 was Vegan Crepes an almost identical recipe, but NO bananas and add a touch of water to make the batter thinner and NO baking powder.
